Classic White Trash Chicken and Rice…Or is it?

I decided to experiment today with the classic white trash casserole (pasta or rice, some sort of meat, and many cans of condensed soup) and came up with this…Chicken and Rice, that is very nice.   Instead of using canned cream of mushroom soup, I made my own of a sort.  Then added organic rice and oragnic chicken.  The kids loved it and it tasted very much like its traditional white trash cousin.  And for those who have visited before and might ask, this is a real recipe. :) 

1 can of unsweetened coconut milk

1 tsp. red palm oil

1/2 c. sliced fresh mushrooms

1 tsp. flour

2 c. rice

1 diced scallion

salt and pepper to taste

Chicken in your preferred amount

In a cooking pot, melt red palm oil and add sliced mushrooms and diced scallions.  When the mushrooms and scallions are done, add 1 teaspoon flour and mix together.  This is to help thicken the coconut milk.  Add entire can of coconut milk and stir over medium heat until thickened.

Put 2 cups of rice into baking dish and pour coconut milk mixture over top of the rice.  Place raw chicken on top of the rice, cover and bake at 350 for 45 minutes**.  After 45 minutes, remove cover and let cook until chicken gets a bit brown on top.

**I live in a high altitude area, so watch the cooking time as it may vary greatly in your region.

One of the few things I was rather proud of John McCain over, was his stance on banning torture.  I believed his experiences as a POW would inspire him to keep anyone from experiencing what he did…guess I was wrong…very wrong indeed.  *sigh*

Waggle of Witches Quilt

The quilt is finally complete!  It did end up taking a wee bit longer than I had planned, but I also didn’t plan on the Imps and I getting sick!  Ah, the best laid plans of mice and moms.    My daughter adores it and told me it was her best birthday gift.

I was wandering around the web and came across this site and find it terrible to think this is really happening…that Native land rights are still being exploited by the American Government.  It was a sad and fascinating read, although I would have liked to view the film my computer wouldn’t pull it up.

Ham Hock Hat

This is my first knitting project made in the round, with multiple colors, decreasing, pattern reading, and making an ‘I’ cord.  Originally, this hat was intended for my daughter, but as you can see its a wee bit small…so small in fact that the only thing I could find it would fit was the ham we were having for dinner…crown rib roasts have those little chef hat thingies and now hams can have striped winter hats…I bet this will be all the rage in gourmet circles…*lol*
